  • 2 tablespoons unsalted butter, divided
  • 1 ½ cups orzo pasta, uncooked
  • 3 cups chicken broth
  • 8 ounces baby bella mushrooms, sliced
  • ½ teaspoon kosher salt, divided
  • 1 large yellow onion, diced
  • 1 ½ teaspoons garlic, minced
  • ¾ cup heavy whipping cream
  • 1 cup parmesan cheese, freshly grated
  • ¼ teaspoon black pepper
  • 1 pinch red pepper flakes, optional
  • 1 teaspoon fresh lemon juice
  • Fresh parsley chopped for garnish
  • 1 pound top sirloin steak, cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 tablespoon unsalted butter

Instructions

  1. Heat a large skillet over medium heat and melt 1 tablespoon of butter. Toast the orzo for 3 to 4 minutes until lightly golden.
  2. Add chicken broth to the orzo, bring to a boil, reduce heat, cover, and simmer for 12 to 15 minutes until tender. Keep covered after removing from heat.
  3. In a second skillet over medium-high heat, melt the remaining butter and add mushrooms. Let them cook undisturbed for 2 to 3 minutes.
  4. Season mushrooms with a pinch of kosher salt, then add diced onion and stir. Cook until mushrooms are golden and moisture evaporates, roughly 5 to 6 minutes.
  5. Add minced garlic and cook for another 30 seconds.
  6. Reduce heat, add heavy whipping cream, parmesan cheese, remaining salt, black pepper, and optional red pepper flakes. Stir and simmer for 2 to 3 minutes until thickened.
  7. Stir in lemon juice, then mix the sauce with the cooked orzo until creamy and combined. Cover to keep warm.
  8. Wipe the skillet clean to cook the steak. Pat steak dry, season with salt and pepper.
  9. Heat vegetable oil in the skillet over medium-high heat. Add steak in a single layer, cooking without moving for 2 minutes to form a crust. Flip and cook for another 2 to 3 minutes until desired doneness is reached.
  10. Reduce heat, add butter, and baste the steak with the melted butter for 30 seconds.
  11. Top the creamy orzo with steak bites, garnish with chopped parsley, and serve immediately.

Notes

Feel free to add your favorite vegetables to the orzo for extra nutrition.
For a healthier version, consider using leaner cuts of steak or swapping heavy cream for a lighter alternative.
Make sure not to overcrowd the skillet when cooking the steak for the best sear.
