Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 8 oz good-quality pasta (rigatoni, penne, or fusilli)
  • 3 cups water
  • Salt to taste
  • 1 teaspoon thyme leaves
  • 4 oz cream cheese
  • 1/4 cup grated parmesan cheese
  • Freshly ground black pepper to taste

Instructions
