Instructions
- Preheat the oven to 350ºF and prepare a 9-inch springform pan by spraying it with nonstick baking spray and lining the bottom with parchment paper.
- In a bowl, mix graham cracker crumbs and melted butter until it resembles wet sand.
- Press the crumb mixture firmly into the bottom of the prepared pan to form a crust.
- Par-bake the crust for 8 minutes, then let it cool while you prepare the filling.
- In a stand mixer, beat the cream cheese on medium speed for 1-2 minutes until it's light and smooth.
- Add granulated sugar, whole milk, sour cream, all-purpose flour, and vanilla extract. Mix until just combined, scraping down the bowl as needed.
- With the mixer on low speed, add eggs one at a time, ensuring each egg is fully incorporated before adding the next.
- Scrape the sides of the bowl and mix briefly if needed to ensure the filling is smooth.
- Pour the cheesecake filling over the cooled crust and bake for 55-60 minutes, until the edges are set and the center jiggles slightly when shaken.
- Turn off the oven, crack the door, and let the cheesecake cool in the oven for one hour to minimize cracks.
- Transfer the cheesecake to the refrigerator to chill for at least 6 hours, preferably overnight.
- To serve, run a hot knife around the edge of the pan before releasing the latch and removing the sides. Transfer to a serving dish and slice with a warmed knife. Serve with fresh berries or whipped cream.
