- 2 pounds russet potatoes
- 1 cup sour cream
- 1/2 cup milk
- 1/2 cup butter
- 2 cups shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Wash the russet potatoes and prick them with a fork.
- Bake for 60 minutes or until tender.
- Let the potatoes cool slightly, then slice them open and scoop out the insides into a large bowl.
- Add sour cream, milk, butter, and half of the cheese to the bowl. Mix until creamy and smooth.
- Fold in crumbled bacon and chopped green onions. Season with salt and pepper.
- Transfer the mixture back into the potato skins or into a casserole dish.
- Top with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes until heated through and cheese is melted and bubbly.
Notes
You can prepare this casserole ahead of time and refrigerate it before baking.
