- 1 lb homemade rough puff pastry or store-bought frozen puff pastry
- 1 cup granulated sugar
- 2 and 1/2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cardamom
- 2 teaspoons orange zest (optional)
Instructions
- Prepare your dough and chill it well.
- Mix granulated sugar, cinnamon, nutmeg, and cardamom in bowls.
- Roll out the dough and sprinkle with sugar mixture.
- Sprinkle filling over dough, roll it up, and chill again.
- Preheat oven to 400°F (204°C) and prepare baking sheets.
- Slice the logs into 3/8-inch pieces and arrange on baking sheets.
- Sprinkle tops with sugar mixture and bake for 8-9 minutes, flip, and bake again until golden brown.
- Cool before serving.
Notes
These palmiers are best enjoyed fresh but can be stored in an airtight container for up to a week.
Reheat in a 350°F oven for about 5 minutes to regain crispiness.
For gluten-free options, substitute with your favorite gluten-free puff pastry.
