Ingredients

  • ½–¾ cup raisins
  • ½ cup chopped walnuts

Instructions

  • Combine wet ingredients: mix water and honey, then add yeast and let it foam.
  • Combine dry ingredients: whisk flour, salt, and cinnamon together.
  • Incorporate wet and dry ingredients to form a shaggy dough.
  • Cover and let the dough rise at room temperature for 8 to 10 hours until doubled.
  • Shape the dough, fold in cranberries, raisins, and walnuts, then refrigerate overnight.
  • Preheat Dutch oven to 450°F (232°C) and prepare dough for baking.
  • Score the dough, place it in the Dutch oven, cover, and bake for 30 minutes.
  • Remove cover and bake for an additional 15–20 minutes until golden brown.
