Description

These Valentine Strawberry Cheesecake Overnight Oats combine the rich flavors of cheesecake with fresh strawberries. Ideal for busy mornings or a lovely treat on Valentine’s Day, this recipe is simple to prepare and nourishing at the same time!


Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup milk of choice
  • ½ cup plain Greek yogurt
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • ¾ cup fresh strawberries, chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon maple syrup (for strawberries)
  • Toppings (optional)

Instructions

  • Prepare strawberry mixture by mixing chopped strawberries with lemon juice and maple syrup.
  • Make cheesecake base by whisking cream cheese, Greek yogurt, vanilla extract, maple syrup, and salt together until smooth.
  • Add oats and milk to cheesecake base, combining well and letting sit for 5-10 minutes.
  • Layer oats and strawberries in jars, finishing with the oat mixture on top.
  • Chill overnight in the refrigerator for at least 6 hours before serving.
