Description
These Valentine strawberry yogurt bites combine fresh strawberries and creamy yogurt for a tasty, simple treat. A perfect snack for those seeking homemade goodness.
Ingredients
Scale
- ½ cup granola, more for topping
- 1 cup yogurt of choice
- ½ cup fresh strawberries, hulled and diced
- ¾ cup fresh strawberries, sliced or chopped
- ¼ cup granola, smaller pieces work better
Instructions
- Line a 12-cup muffin pan with muffin liners or use a silicone baking pan.
- Sprinkle about 2 teaspoons of granola into the bottom of each cup and set aside.
- In a medium bowl, combine yogurt and diced strawberries. Mash the strawberries into the yogurt with a pastry cutter or fork until mostly mixed, leaving a few chunks.
- Use a rubber spatula or wooden spoon to thoroughly stir and fold the mixture until well combined.
- Spoon 2 tablespoons of the strawberry yogurt mixture into each muffin cup, creating an even layer and tap the pan to smooth it out.
- Press about 1 tablespoon of sliced strawberries on top of each yogurt layer.
- Sprinkle about 1 teaspoon of granola over the sliced strawberries.
- Place the pan in the freezer and chill until firm, approximately 2-4 hours.
- Once firm, pop out each frozen yogurt bite, let them thaw for a few minutes, and enjoy.
Notes
For added flavor, try using flavored yogurt.
These bites can be stored in an airtight container in the freezer for up to a month. Try using other fruits like blueberries or peaches for variety.
