These Valentine’s Brunch Goat Cheese Soufflés are the perfect blend of creamy goat cheese and herbs, encased in a light soufflé that’s ideal for cozy mornings. Simple to prepare, they create a memorable dish that impresses with every bite.

- 3 tablespoons finely grated parmesan cheese divided, plus more for sprinkling on the ramekins
- ½ teaspoon dried lavender
- ½ medium lemon, zested
- ⅛ teaspoon kosher salt
- ⅛ teaspoon ground black pepper
- 3 ounces soft goat cheese
- 1 ounce ricotta cheese
- 1 tablespoon fresh thyme leaves
- 1 tablespoon honey (orange blossom honey recommended)
- 3 large eggs, separated
- ¼ cup low-fat milk
- 2 teaspoons all-purpose flour

Instructions
- Preheat your oven to 375˚ F. Prepare the ramekins by buttering them and adding grated Parmesan cheese to the bottoms and sides. Set aside.
- Rub the dried lavender to create a fine powder, then combine it with lemon zest, 1 tablespoon of Parmesan, salt, and pepper in a small bowl. Set aside.
- In a medium bowl, mix the goat cheese, ricotta, 2 tablespoons of Parmesan cheese, thyme, honey, egg yolks, milk, and flour thoroughly.
- In another bowl, whip the egg whites until they reach stiff peaks, being careful not to over-whip. Gently fold the egg whites into the cheese-yolk mixture in thirds, leaving some lumps for a lighter soufflé.
- Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins. Spoon the cheese mixture into the ramekins, filling them about two-thirds full.
- Use a cloth or paper towel to clean the sides and rims of the ramekins where the mixture could rise.
- Bake for 20 minutes or until golden and firm. Let cool in the ramekins for 15 minutes before serving. Optionally, run a knife around the edges to serve the soufflés out of the ramekins, or serve them plain in the ramekins.
- Serve warm with a small salad.
Notes
For a more flavorful soufflé, use fresh herbs like thyme. Dried herbs work as well but fresh adds a special touch.
Make sure not to over-beat the egg whites; soft peaks are what you want for a light and airy structure.
Using high-quality goat cheese enhances the overall flavor of the dish.
