Description

These Valentines Love Letter Pastries are a heartwarming treat with a flaky pastry envelope and sweet strawberry jam filling. Quick to prepare, they make wonderful gifts or delightful additions to any meal.


Ingredients

Scale
  • 240g plain flour
  • 2 tablespoons caster sugar
  • 220g dairy-free block butter
  • Ice-water
  • 1 jar of vegan-friendly strawberry jam
  • Dairy-free milk (optional)
  • Icing sugar (dusting, optional)

Instructions

  • Mix dry ingredients, sift flour and caster sugar together.
  • Incorporate butter until the mix resembles coarse sand.
  • Add ice-water gradually until the dough comes together.
  • Chill the dough for 30 minutes wrapped in greaseproof paper.
  • Preheat oven to 340°F (170°C) and line baking trays.
  • Roll out the dough and cut into diamond shapes.
  • Fill with strawberry jam and shape into envelopes.
  • Brush with dairy-free milk and sprinkle caster sugar on top.
  • Bake for 20-25 minutes until golden brown.
  • Cool briefly on wire racks and dust with icing sugar.

Notes

Use cold butter for a flaky texture.
Store leftovers in an airtight container at room temperature for up to three days.
