Description

These Air Fryer Greek Roasted Potatoes are irresistibly tasty and easy to prepare. With baby yukon gold potatoes, Greek salad dressing, and seasoning, they make a quick and satisfying side dish.


Ingredients

  • 3 pounds baby yukon gold potatoes
  • ¼ cup greek salad dressing
  • 1 ½ teaspoons greek seasoning blend
  • ½ lemon juice
  • Fresh minced parsley for garnish

Instructions

  1. Chop the potatoes in half, quarter any extra large ones, and place them in a large bowl. Cover with cold water and let them soak for 30 minutes.
  2. Drain the water and rinse the potatoes with fresh water.
  3. Thoroughly dry the potatoes, then transfer them to a mixing bowl. Add the salad dressing and seasoning, tossing to coat well.
  4. Spray the air fryer basket with non-stick spray. Add the potatoes and air fry at 400 degrees for 20 minutes, shaking the basket every 5 minutes.
  5. Taste the potatoes, seasoning with additional Greek seasoning if necessary. Garnish with fresh parsley and squeeze lemon juice over the potatoes before serving.

Notes

Soaking the potatoes helps achieve a crispier texture.
Adjust the Greek seasoning according to personal taste for extra flavor.
