Description

This Apple Blueberry Pie with Flaky Lattice Crust combines the sweetness of apples and blueberries in a buttery, flaky crust. Perfect for gatherings or a comfy dessert at home.

Ingredients

Scale
  • 2 pie crusts homemade or store-bought for a double-crust pie
  • 2 medium Granny Smith apples peeled, cored, and thinly sliced
  • 2 medium Honeycrisp apples peeled, cored, and thinly sliced
  • 2 cups fresh blueberries or frozen, unthawed
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter cut into small cubes
  • 1 egg beaten with 1 tablespoon water (for egg wash)
  • Coarse sugar for sprinkling optional

Instructions

  1. Preheat the oven to 400°F (200°C) and place a baking sheet on the lowest rack to catch drips.
  2. Roll out one pie crust and fit it into a 9-inch pie dish, trimming excess and crimping edges decoratively.
  3. In a large bowl, combine the sliced apples and blueberries with granulated sugar, brown sugar, cornstarch, lemon juice, lemon zest, cinnamon, nutmeg, and salt. Toss gently to coat.
  4. Spoon the fruit mixture into the prepared crust, mounding slightly in the center, and dot with butter cubes.
  5. Roll out the second crust, place it on top, trim excess, crimp edges to seal, and cut slits for steam to escape. Alternatively, create a lattice crust by weaving strips of dough over the filling.
  6. Brush the top crust with egg wash and sprinkle with coarse sugar if desired.
  7. Bake for 20 minutes at 400°F, then reduce to 375°F (190°C) and continue baking for 30-40 minutes until golden brown and bubbly. Cover edges with foil if they brown too quickly.
  8. Once baked, let the pie cool on a wire rack for at least 2 hours before slicing.

Notes

For the best flavor, use a combination of tart and sweet apples.
If using frozen blueberries, do not thaw them beforehand to avoid a watery filling.
Ensure the pie cools completely to allow the filling to set properly.
