Description

This Apple Cider Donut Bundt Cake is a delightful blend of flavors, featuring sweet apple cider, warm spices, and a tender crumb. Perfect for gatherings and easy to make!


Ingredients

  • 4 cups (500 g) all-purpose flour
  • 3 cups (600 g) granulated sugar
  • 4 teaspoons baking powder
  • 4 teaspoons apple pie spice
  • 1 teaspoon kosher salt
  • 2 ½ cups apple cider, or apple juice
  • 2 large eggs, room temperature
  • ¼ cup (½ stick / 57 g) unsalted butter, melted
  • 2 tablespoons vanilla extract
  • ¼ cup apple cider
  • ½ cup (100 g) granulated sugar
  • 2 teaspoons apple pie spice

Instructions

  1. Preheat the oven to 350°F and greas a 10 to 12 cup Bundt pan with baking spray (or butter and flour).
  2. In a large bowl, combine flour, granulated sugar, baking powder, apple pie spice, and salt.
  3. In another bowl, whisk together apple cider, eggs, melted butter, and vanilla until well mixed.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined (batter will be slightly thin).
  5. Pour the batter into the prepared Bundt pan evenly.
  6. Bake for 50 to 65 minutes, or until a toothpick inserted in the thickest part comes out with a few moist crumbs; start checking at 50 minutes.
  7. Cool the cake in the pan for 10 to 15 minutes, then invert onto a wire rack.
  8. While warm, brush or drizzle ¼ cup apple cider over the cake.
  9. Mix sugar and apple pie spice in a small bowl, then sprinkle over the warm cake, pressing gently for even coverage.
  10. Let the cake cool completely before slicing.

Notes

For extra flavor, use fresh apple cider instead of apple juice.
Make sure to not overmix the batter for a light texture.
Cool the cake completely for clean slices.
