- 1 cup peeled, cored, and chopped apples (½” pieces)
- ⅛ teaspoon ground cinnamon
- 1 tablespoon dark brown sugar
- 1¼ cups all-purpose flour
- ¾ teaspoons baking powder
- ¼ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ½ cup unsalted butter, melted
- ¾ cups dark brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- ¼ teaspoon vanilla extract
- ½ teaspoon cinnamon
- 2 tablespoons milk
Instructions
- In a frying pan over medium heat, combine the apples, brown sugar, and cinnamon. Cook for about 5 minutes until the apples soften, then transfer to a plate to cool.
- Preheat the oven to 350°F. Grease and parchment-line an 8×8” pan with overhangs for easy removal.
- In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk the melted butter, brown sugar, egg, and vanilla until smooth.
- Combine the wet ingredients with the dry ingredients and fold until nearly combined. Add the cooled apples and their juices, folding in gently.
- Spread the batter in the prepared pan and bake for 18-22 minutes until the top is lightly browned. Avoid overbaking!
- Allow to cool completely on a wire rack before adding icing.
Notes
For a more intense cinnamon flavor, increase the ground cinnamon in the batter.
Serve with a dusting of powdered sugar for an attractive presentation.
