Description

These Apple Cinnamon Blondies are a delightful treat, featuring tender apples, a hint of cinnamon, and a gooey texture. Ingredients

  • 1 cup peeled, cored, and chopped apples (½” pieces)
  • ⅛ teaspoon ground cinnamon
  • 1 tablespoon dark brown sugar
  • 1¼ cups all-purpose flour
  • ¾ teaspoons baking powder
  • ¼ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ½ cup unsalted butter, melted
  • ¾ cups dark brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • ¼ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 2 tablespoons milk

Instructions

  1. In a frying pan over medium heat, combine the apples, brown sugar, and cinnamon. Cook for about 5 minutes until the apples soften, then transfer to a plate to cool.
  2. Preheat the oven to 350°F. Grease and parchment-line an 8×8” pan with overhangs for easy removal.
  3. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  4. In another bowl, whisk the melted butter, brown sugar, egg, and vanilla until smooth.
  5. Combine the wet ingredients with the dry ingredients and fold until nearly combined. Add the cooled apples and their juices, folding in gently.
  6. Spread the batter in the prepared pan and bake for 18-22 minutes until the top is lightly browned. Avoid overbaking!
  7. Allow to cool completely on a wire rack before adding icing.

Notes

For a more intense cinnamon flavor, increase the ground cinnamon in the batter.
Serve with a dusting of powdered sugar for an attractive presentation.
