- ½ cup chopped apple, about 1/2 a large apple
- 1 teaspoon maple syrup
- pinch of cinnamon
- ½ cup old fashioned oats
- ½–¾ cup unsweetened almond milk
- ¼ cup plain greek yogurt or coconut yogurt
- 2 teaspoons maple syrup, honey or your favorite sweetener
- ½ teaspoon vanilla
- ½ teaspoon cinnamon, or apple pie spice
- Toppings: cinnamon apples, nut butter, chopped nuts, chia or hemp seeds
Instructions
- In a small microwave-safe bowl, combine the chopped apple pieces, maple syrup, and a pinch of cinnamon. Stir well and heat for 30-60 seconds until the apples soften. Let cool and set aside ¼ cup of the apples for topping later.
- In a dish with a lid, like a mason jar, add the old fashioned oats, almond milk, yogurt, 2 teaspoons of maple syrup, vanilla, and cinnamon. Mix thoroughly.
- Stir in ¼ cup of the warmed cinnamon apples into the mixture and give it another mix. Seal the jar and shake gently to ensure even distribution.
- Refrigerate overnight or at least for 30-60 minutes if preparing in the morning.
- Before serving, remove the lid, add more yogurt or almond milk if the mixture appears thick. Top with the remaining ¼ cup cinnamon apples and your preferred toppings like nut butter or chopped nuts.
Notes
Adjust the sweetness by varying the amount of maple syrup or honey to your taste.
This recipe can also be made dairy-free by using coconut yogurt and almond milk.
Feel free to customize toppings based on your preference, such as adding chia seeds or hemp seeds for extra nutrition.
