This Avocado Dressing boasts a creamy texture and zesty flavor, perfect for drizzling on salads or dipping fresh veggies. Made with ripe avocados, lemon juice, and a hint of garlic, it’s easy to prepare and a healthy choice for any meal.

- 1 ripe avocado
- 1/4 cup white wine vinegar
- 1 lemon – juice only
- 1 garlic clove
- 3/4 cup avocado oil
- 2 tbsp agave nectar
- 2 tbsp cilantro (or basil, or parsley)
- coarse kosher salt to taste
Instructions
- Ensure you have a blender or food processor with a top opening to add ingredients while blending.
- Cut the avocado in half, remove the pit and skin, and place the avocado meat in the blender or food processor.
- Add white wine vinegar, lemon juice, agave nectar, garlic clove, cilantro, and salt, but do not add the oil yet.
- Close the lid and begin blending while slowly drizzling in the avocado oil until fully incorporated.
- Blend for a few more seconds, then check the consistency and taste for salt. If a thinner dressing is desired, add an additional 1/4 cup of avocado oil and blend again.
Notes
Store any leftover dressing in an airtight container in the refrigerator for up to 3 days.
Feel free to swap cilantro for basil or parsley based on your flavor preference.
For added flavor, consider mixing in a pinch of cayenne pepper or additional herbs.
