Description

This Avocado Dressing boasts a creamy texture and zesty flavor, perfect for drizzling on salads or dipping fresh veggies. Made with ripe avocados, lemon juice, and a hint of garlic, it’s easy to prepare and a healthy choice for any meal.


Ingredients

  • 1 ripe avocado
  • 1/4 cup white wine vinegar
  • 1 lemon – juice only
  • 1 garlic clove
  • 3/4 cup avocado oil
  • 2 tbsp agave nectar
  • 2 tbsp cilantro (or basil, or parsley)
  • coarse kosher salt to taste

Instructions

  1. Ensure you have a blender or food processor with a top opening to add ingredients while blending.
  2. Cut the avocado in half, remove the pit and skin, and place the avocado meat in the blender or food processor.
  3. Add white wine vinegar, lemon juice, agave nectar, garlic clove, cilantro, and salt, but do not add the oil yet.
  4. Close the lid and begin blending while slowly drizzling in the avocado oil until fully incorporated.
  5. Blend for a few more seconds, then check the consistency and taste for salt. If a thinner dressing is desired, add an additional 1/4 cup of avocado oil and blend again.

Notes

Store any leftover dressing in an airtight container in the refrigerator for up to 3 days.
Feel free to swap cilantro for basil or parsley based on your flavor preference.
For added flavor, consider mixing in a pinch of cayenne pepper or additional herbs.
