Description

Ingredients

  • 2 lb cod filets
  • ½ cup all-purpose flour
  • 1 teaspoon salt, or more to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon ground pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried italian seasonings
  • 2 whole eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon dried parsley
  • 23 tablespoons olive oil, to drizzle on top of cods
  • chopped parsley, to garnish
  • Lemon wedges, to garnish

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Pat dry the cod filets with a kitchen towel and set aside.
  3. In a bowl, mix flour, salt, garlic powder, ground pepper, paprika, and Italian seasoning to prepare the breading station.
  4. In another bowl, whisk eggs with a splash of water using a fork and set aside.
  5. In a third bowl, combine panko breadcrumbs and dried parsley; set aside.
  6. Coat the cod filets in the flour mixture, dip in the egg mixture, and then coat evenly with the breadcrumb mixture.
  7. Place the filets on a parchment-lined baking tray and spray the tops with cooking spray.
  8. Bake for 12-15 minutes, or until the cod is fully cooked through.
  9. After baking, garnish with chopped parsley and serve with lemon wedges and greens.

Notes

For extra flavor, add a pinch of cayenne pepper to the breadcrumb mixture.
Make sure the cod is patted dry to ensure the coating adheres well.
Serve with a side salad for a complete meal.
