- 2 lb cod filets
- ½ cup all-purpose flour
- 1 teaspoon salt, or more to taste
- 1 teaspoon garlic powder
- 1 teaspoon ground pepper
- 1 teaspoon paprika
- 1 teaspoon dried italian seasonings
- 2 whole eggs
- 1 cup panko breadcrumbs
- 1 teaspoon dried parsley
- 2–3 tablespoons olive oil, to drizzle on top of cods
- chopped parsley, to garnish
- Lemon wedges, to garnish
Instructions
- Preheat the oven to 400 degrees F.
- Pat dry the cod filets with a kitchen towel and set aside.
- In a bowl, mix flour, salt, garlic powder, ground pepper, paprika, and Italian seasoning to prepare the breading station.
- In another bowl, whisk eggs with a splash of water using a fork and set aside.
- In a third bowl, combine panko breadcrumbs and dried parsley; set aside.
- Coat the cod filets in the flour mixture, dip in the egg mixture, and then coat evenly with the breadcrumb mixture.
- Place the filets on a parchment-lined baking tray and spray the tops with cooking spray.
- Bake for 12-15 minutes, or until the cod is fully cooked through.
- After baking, garnish with chopped parsley and serve with lemon wedges and greens.
Notes
For extra flavor, add a pinch of cayenne pepper to the breadcrumb mixture.
Make sure the cod is patted dry to ensure the coating adheres well.
Serve with a side salad for a complete meal.
