- 4 peaches ripe but firm, halved and pitted
- 3 tablespoons unsalted butter, cut into small cubes
- 4 tablespoons brown sugar, light or dark
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Pinch of salt
- 1 tablespoon maple syrup
- Splash of bourbon
Instructions
- Preheat the oven to 375°F and lightly butter a small baking dish that can snugly hold the peaches.
- Arrange the peach halves cut-side up in the baking dish.
- In a small bowl, combine brown sugar, cinnamon, and a pinch of salt; sprinkle this mixture evenly over the peaches.
- Dot each peach half with cubes of butter, then drizzle with vanilla extract, lemon juice, and bourbon.
- Sprinkle the remaining brown sugar mixture over the top of the peaches.
- Bake for 25 to 30 minutes until the peaches are tender and the tops are caramelized.
- Serve warm, ideally with a scoop of vanilla ice cream.
