- ½ cup rolled oats
- 2 tablespoons all-purpose flour
- 2 tablespoons light brown sugar
- 2 tablespoons cold unsalted butter
- 1 teaspoon vanilla extract
- ½ cup avocado oil

- 3 large ripe bananas, peeled and halved
- ¼ cup maple syrup
- 2 teaspoons vanilla extract
- 2 large eggs
- â…“ cup 5% greek yogurt
- ½ cup almond milk
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon sea salt
- 1 teaspoon ground cinnamon
- 4 oz. cream cheese, softened
- ½ cup powdered sugar
- 2–3 tablespoons milk
Instructions
- Heat 1 tablespoon of avocado oil in a large nonstick skillet over medium heat. Add the bananas and cook for 3 minutes, flip and cook for another 3 minutes until golden brown. Set aside.
- Preheat the oven to 350℉ and line an 8×8-inch baking dish with parchment paper.
- Make the streusel topping by combining rolled oats, flour, brown sugar, butter, and vanilla extract in a mixing bowl. Cut together until a crumble forms, then set aside.
- In another bowl, mix flour, baking powder, baking soda, salt, and cinnamon together. Set aside.
- In a separate bowl, combine maple syrup, avocado oil, vanilla extract, eggs, roasted bananas, yogurt, and almond milk using an electric mixer.
- Gradually add the dry ingredients to the wet ingredients and mix until blended.
- Pour the batter into the prepared baking dish and top with the streusel. Bake for 20 minutes, then cover with foil and bake for another 20 minutes, checking for doneness.
- While the cake cools, prepare the glaze by mixing cream cheese, powdered sugar, and milk until smooth.
- After cooling for 15 minutes, drizzle the cake with the cream cheese glaze.

Ensure your bananas are ripe for better flavor.
Feel free to adjust the sweetness by adding more or less maple syrup.
