Ingredients
Scale
- 2.5 lbs chicken thighs boneless skinless
- 2 tablespoon brown sugar
- 2 teaspoon kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- 3 tbsp avocado oil
- 1 cup homemade southern bbq sauce
Instructions
- Combine chicken thighs in a large bowl with brown sugar, kosher salt, garlic powder, onion powder, smoked paprika, chili powder, and avocado oil. Mix well and marinate for at least 4 hours or overnight.
- Remove the chicken from the fridge 30 minutes before cooking.
- Preheat the grill to medium-high heat.
- Place the chicken thighs on the grill and reduce the heat to medium. Close the grill lid and cook for a few minutes on each side to achieve grill marks.
- When the chicken is nearly cooked through, baste each side with BBQ sauce, then move them to indirect heat to absorb the flavors and finish cooking.
- Ensure the internal temperature is 175-190 degrees for dark meat (or 165 degrees F for white meat) before removing and serving with additional BBQ sauce.
Notes
For more flavor, consider marinating the chicken overnight.
If you prefer baking, cook the chicken in a preheated oven at 375°F (190°C) for about 30-40 minutes instead of grilling.
Adjust the spice levels by increasing or decreasing the chili powder according to your taste.
