  • 2.5 lbs chicken thighs boneless skinless
  • 2 tablespoon brown sugar
  • 2 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 3 tbsp avocado oil
  • 1 cup homemade southern bbq sauce

Instructions

  1. Combine chicken thighs in a large bowl with brown sugar, kosher salt, garlic powder, onion powder, smoked paprika, chili powder, and avocado oil. Mix well and marinate for at least 4 hours or overnight.
  2. Remove the chicken from the fridge 30 minutes before cooking.
  3. Preheat the grill to medium-high heat.
  4. Place the chicken thighs on the grill and reduce the heat to medium. Close the grill lid and cook for a few minutes on each side to achieve grill marks.
  5. When the chicken is nearly cooked through, baste each side with BBQ sauce, then move them to indirect heat to absorb the flavors and finish cooking.
  6. Ensure the internal temperature is 175-190 degrees for dark meat (or 165 degrees F for white meat) before removing and serving with additional BBQ sauce.

Notes

For more flavor, consider marinating the chicken overnight.
If you prefer baking, cook the chicken in a preheated oven at 375°F (190°C) for about 30-40 minutes instead of grilling.
Adjust the spice levels by increasing or decreasing the chili powder according to your taste.
