- ¼ cup granulated sugar, plus 1 tbsp for sprinkling
- 1 tablespoon cornstarch
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 sheet store-bought pie dough (or homemade), chilled
- 1 egg (for egg wash)

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a mixing bowl, combine the mixed berries, ¼ cup of granulated sugar, cornstarch, lemon zest, lemon juice, and vanilla extract. Toss gently to mix the ingredients.
- Roll out the chilled pie dough on a floured surface into a circular shape. Transfer it onto the prepared baking sheet.
- Spread the berry mixture in the center of the dough, leaving a border around the edges.
- Fold the edges of the dough over the berries, creating a rustic galette shape.
- Brush the exposed dough with the egg wash and sprinkle with the remaining tablespoon of sugar and coarse sugar if desired.
- Bake for about 25-30 minutes, or until golden brown and bubbly. Let cool slightly before serving.
