Description

Ingredients

  • 2 cups frozen corn, thawed
  • 1 cup black beans, drained and rinsed
  • 1/4 cup cilantro, finely chopped
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh jalapeño, finely diced (optional)
  • 1/4 cup red bell pepper, finely diced
  • 2 tsp lime juice
  • 2 tsp lemon juice
  • 1/2 tsp salt

Instructions

  1. Thaw the frozen corn and place it in a mixing bowl.
  2. Add the black beans, cilantro, red onion, jalapeño (if using), and red bell pepper to the bowl.
  3. Pour in the lime juice and lemon juice, then sprinkle with salt.
