- ¾ cup fresh blueberries
- 1 tablespoon maple syrup
- 1 teaspoon lemon juice
- ¾ cup 4% cottage cheese
- 3 tablespoons maple syrup
- ½ teaspoon cornstarch
- ½ teaspoon vanilla bean paste
- 1 graham cracker, crushed
Instructions
- Combine the blueberries, maple syrup, and lemon juice in a small saucepan and bring to a boil.
- Reduce the heat and let simmer for 10 minutes until the blueberries are reduced by half.
- Remove the saucepan from heat and cool for 10 minutes.
- In a blender, combine the cottage cheese, 3 tablespoons maple syrup, cornstarch, and vanilla bean paste and blend until smooth.
- Layer the cottage cheese mixture and the blueberry sauce in popsicle molds.
- Top with crushed graham cracker and freeze overnight or for at least 5 hours.
Notes
You can use frozen blueberries if fresh ones are not available.
For extra sweetness, adjust the amount of maple syrup to taste.
