Description

Enjoy these Blueberry Crumble Bars featuring a rich buttery crust, sweet blueberries, and a delightful crumb topping. Perfect for a comforting dessert, these bars are simple to make and bursting with flavor.


Ingredients

  • 1 1/2 cups salted butter, softened
  • 1 cup sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon cornstarch
  • 4 cups fresh blueberries
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350℉ and line a 9×13 inch pan with parchment paper.
  2. In a large bowl or the bowl of a stand mixer, combine the butter, sugar, vanilla, and salt.
  3. Scrape down the sides of the bowl then stir in the flour.
  4. Press about 2/3 of the mixture into the prepared pan and bake for 15 minutes.
  5. Combine the sugar and cornstarch. Add the blueberries and stir to combine.
  6. Spoon the blueberry mixture over the bottom crust and gently spread to an even layer.
  7. Top with the remaining crumb mixture.
  8. Bake for an additional 30-35 minutes or until golden brown and bubbly.
  9. For the icing (optional), whisk together the powdered sugar and 2 tablespoons of milk. Add additional milk as needed to make a desirable drizzling consistency.
  10. Drizzle over the cooled bars and enjoy.

Notes

Allow the bars to cool completely before cutting for neat slices.
Store in an airtight container at room temperature for up to 3 days.
These bars freeze well; wrap them individually for an easy treat later.
