- 3/4 cup butter, softened
- 2/3 cup sugar
- 2/3 cup brown sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/3 cups flour
- 1 1/3 cups quick oats
- 1 (8 oz) cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 1 tsp vanilla
- 1 egg yolk
- 1 cup blueberries
Instructions
- Preheat the oven to 350 degrees F and grease a 9 x 13 inch pan with non-stick spray.
- In a mixing bowl, beat together the softened butter, sugar, and brown sugar until creamy.
- Add baking soda, salt, flour, and quick oats to the mixture and blend well.
- Press half of the mixture evenly into the bottom of the prepared pan and bake for 13 minutes.
- While the bottom layer bakes, prepare the filling.
- In another bowl, beat together the softened cream cheese and sweetened condensed milk until smooth. Then, add the vanilla and egg yolk and mix until combined.
- After removing the bottom layer from the oven, carefully spread the cream cheese mixture evenly over it.
- Sprinkle blueberries over the cream cheese layer evenly.
- Top with the remaining crumble mixture, pressing down lightly.
- Bake for 20-25 minutes until the edges are golden brown. Allow to cool completely before slicing.
Notes
For best results, use fresh blueberries for more flavor.
These bars can be stored in the refrigerator for up to a week.
Drizzle with chocolate or serve with whipped cream for an extra treat.
