Description

This Blueberry Crumble Pie is a delightful mix of fresh blueberries and a buttery crumble topping, offering a simple yet mouthwatering dessert that everyone will love. Perfect for summer gatherings or a cozy family dinner!

Ingredients

Scale
  • 1 unbaked Flaky Pie Crust or All-Butter Pie Crust
  • 1 large egg beaten with 1 Tablespoon milk
  • 1/2 cup packed light or dark brown sugar
  • 6 Tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 5 Tablespoons unsalted butter, very cold and cubed
  • 1/2 cup old-fashioned whole rolled oats
  • 6 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1 Tablespoon cornstarch
  • 1 Tablespoon fresh lemon juice
  • 1 teaspoon fresh lemon zest

Instructions

  1. Prepare the butter pie crust through step 5 of the recipe.
  2. In a medium bowl, whisk together brown sugar, flour, cinnamon, and salt. Cut in the cold butter until crumbly. Stir in oats, then refrigerate until needed.
  3. Preheat the oven to 400°F (204°C).
  4. Roll out the chilled pie dough to a 12-inch circle and place it in a 9-inch pie dish. Crimp the edges and brush with egg wash; refrigerate for 10 minutes.
  5. In a large bowl, combine the blueberries, granulated sugar, flour, cornstarch, lemon juice, and lemon zest. Mix until moistened, adding bursts of blueberries if needed.
  6. Fill the prepared crust with the blueberry mixture and top with the crumble.
  7. Bake for 25 minutes at 400°F. Reduce temperature to 375°F (190°C) and cover edges with a pie crust shield. Bake for an additional 35-40 minutes until bubbling.
  8. Remove from the oven and cool for 4-5 hours before slicing. Serve with vanilla ice cream, if desired.
  9. Store leftovers covered at room temperature for 1 day or refrigerated for up to 5 days.

Notes

Let the pie cool completely to achieve the perfect slice without a runny filling.
You can mix and match the berries for a delicious twist—raspberries or blackberries work well!
Serve warm or at room temperature, preferably with a scoop of ice cream for a delightful treat.
