Description

These Blueberry Lemon Bars are a delightful treat combining the sweetness of fresh blueberries and the tangy flavor of lemon. Perfect for picnics or dessert gatherings, they are easy to make and sure to impress anyone looking for delicious homemade desserts.


Ingredients

  • 2 cups all purpose flour
  • 1 cup unsalted butter room temperature
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar
  • 4 eggs
  • 2 cups granulated sugar
  • 1/4 cup all purpose flour
  • 1/4 cup lemon juice
  • 2 teaspoons lemon zest optional
  • 1 cup fresh blueberries

Instructions

  1. In a medium bowl, mix the flour, salt, and powdered sugar. Cut in the butter until the mixture is crumbly.
  2. Prepare a 9×13 inch baking pan by greasing it. Firmly press the crust mixture into the bottom of the pan.
  3. Bake in a preheated oven at 350°F for 18-20 minutes or until it is light golden brown. Cool the crust after baking.
  4. In another bowl, whisk the eggs. Add the sugar and flour, and whisk until combined. Stir in the lemon juice and optional lemon zest until well mixed. Pour this mixture over the cooled crust and sprinkle the blueberries on top.
  5. Bake again for 20-25 minutes until the top starts to turn golden brown. Cool slightly on a wire rack.
  6. Once cooled, place in the refrigerator for a minimum of 2 hours before cutting and serving. Dust with powdered sugar as desired.

Notes

For a more intense lemon flavor, add more lemon zest.
Ensure the bars are fully cooled in the fridge to maintain their structure when cutting.
