- 1 ¼ cup all purpose flour
- 1 cup rolled oats
- ½ cup brown sugar
- ½ tsp baking powder
- ½ tsp salt
- 10 tbsp butter, melted
- 1 tsp vanilla
- 3 cups blueberries
- 2 tbsp lemon juice
- â…“ cup sugar
- 3 tbsp cornstarch
- ½ tsp vanilla
Instructions
- Preheat the oven to 350°F and prepare an 8×8 baking dish with parchment paper, leaving a 1-inch overhang.
- In a large mixing bowl, combine flour, oats, brown sugar, baking powder, and salt. Add melted butter and vanilla, stirring until well mixed.
- Press two-thirds of the crust mixture into the bottom of the baking pan and set aside.
- In another bowl, mix blueberries, lemon juice, sugar, cornstarch, and vanilla. Pour this mixture over the crust in the baking pan. Sprinkle the remaining one-third of the crust mixture over the blueberries.
- Bake in the preheated oven for about 55 minutes, or until the blueberries start to bubble and the crust turns golden brown. Let cool completely in the pan before lifting out using the parchment paper. Cut into 9 bars and serve.
Notes
Store leftover bars in an airtight container in the refrigerator for up to 5 days.
For added flavor, try mixing in a little cinnamon to the crust mixture.
These bars can be served warm, at room temperature, or chilled. Enjoy!
