- 8 ounces fettuccine
- 12 ounces large raw shrimp, peeled and deveined (tails off)
- 1 tablespoon cajun seasoning, divided
- 1 tablespoon extra virgin olive oil
- 1 ring (13.5 ounces) smoked sausage, cut into ¼-inch pieces
- ¼ cup (½ stick / 57 g) unsalted butter
- 1 tablespoon garlic, minced
- 2 cups (476 g) heavy whipping cream
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ teaspoon crushed red pepper
- 1 cup (100 g) parmesan cheese, grated
- parsley, for garnish
Instructions
- Bring a large pot of salted water to a boil over medium-high heat. Add the fettuccine and cook until al dente, about 8-10 minutes, then drain and set aside, reserving some pasta water.
- Pat the shrimp dry, season with half of the Cajun seasoning, and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the smoked sausage and cook until golden brown, about 2-3 minutes per side. Remove from the skillet and keep warm under foil.
- In the same skillet, add the seasoned shrimp and cook until done, about 1-2 minutes per side. Remove and set aside with the sausage.
- Melt the butter in the skillet, then add minced garlic and cook for about 1 minute until fragrant.
- Pour in the heavy cream, add the remaining Cajun seasoning, salt, pepper, and crushed red pepper. Stir well and bring to a gentle boil, stirring occasionally.
- Reduce heat to low and let the sauce simmer for 6-8 minutes until it thickens slightly.
- Add in the parmesan cheese and stir until melted and smooth.
- Return the fettuccine, shrimp, and sausage to the skillet. Toss everything to coat in the sauce, adding reserved pasta water if needed to adjust the consistency.
- Garnish with chopped parsley and serve hot.
Notes
For extra flavor, consider adding diced bell peppers or onions when cooking the sausage.
Make sure not to overcook the shrimp to keep them tender and juicy.
