Description

These Caramel Apple Cheesecake Bars bring together a buttery shortbread crust, creamy cheesecake, and spiced apples, making a perfect homemade dessert that’s simple yet indulgent!

Ingredients

Scale
  • 1 3/4 cups Flour
  • 1/2 cup Brown Sugar
  • 3/4 cup Butter, Softened
  • 2 (8 oz) packages Cream Cheese, Softened
  • 1/2 cup Sugar
  • 1 tsp Vanilla
  • 2 Eggs
  • 3 cups Apples (Peeled & Diced)
  • 2 tbsp Brown Sugar
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 cup Flour
  • 1/2 cup Quick Oats
  • 2/3 cup Brown Sugar
  • 1 1/2 tsp Cinnamon
  • 1/2 cup Butter, Melted
  • Caramel Sauce

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 9×13 inch pan with non-stick spray and set it aside.
  2. To make the shortbread crust, combine 1 3/4 cups of flour, 1/2 cup brown sugar, and 3/4 cup softened butter in a bowl with a fork until crumbly.
  3. Press the mixture into the prepared pan and bake for 20 minutes.
  4. In another bowl, beat 2 packages of softened cream cheese, 1/2 cup sugar, and 1 tsp vanilla until smooth. Add 2 eggs and mix until well combined. Set aside.
  5. Peel and dice enough apples to make 3 cups. In a mixing bowl, toss the apples with 2 tbsp brown sugar, 1/2 tsp cinnamon, and 1/4 tsp nutmeg. Set aside.
  6. To prepare the streusel layer, mix 1 cup flour, 1/2 cup quick oats, 2/3 cup brown sugar, 1 1/2 tsp cinnamon, and 1/2 cup melted butter together until thick and crumbly, using hands if needed.
  7. Once the crust is done, let it cool for 10 minutes.
  8. Spread the cream cheese layer evenly over the crust, then layer the spiced apples on top. Sprinkle the streusel mixture over the apples.
  9. Bake for another 30-40 minutes, until the cheesecake layer is set.
  10. Allow to cool completely, then refrigerate until cold and firm. Serve chilled, drizzled with caramel sauce.

Notes

For the best flavor, use tart apples like Granny Smith.
Ensure the cream cheese is softened to avoid lumps in the filling.
Feel free to add more caramel sauce for a sweeter treat!
