Description

Ingredients

  • 2 tablespoons honey
  • 1 4-inch sprig thyme
  • 3 large figs, cut in half
  • 1/8 teaspoon vanilla extract
  • 12 ounces greek yogurt, plain or vanilla
  • 2 tablespoons pistachios, toasted

Instructions

  1. Heat a medium skillet over medium-low heat and add the honey along with the thyme leaves. Cook for about 1 minute.
  2. Add the fig halves cut-side down into the honey and caramelize for 2-3 minutes. Use tongs to turn the figs and sauté for an additional 2 minutes.
  3. Remove from heat and stir in the vanilla extract. Serve the caramelized figs over Greek yogurt, drizzling with thyme honey and topping with toasted pistachios.

Notes

Ensure the skillet is not too hot to avoid burning the honey.
