- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 teaspoons minced garlic
- 1 tablespoon worcestershire sauce
- 1 teaspoon italian seasoning
- 1 teaspoon beef better than bouillon
- ½ teaspoon crushed red pepper flakes, optional
- 1 (14.5 oz) can petite fire roasted tomatoes
- 3–4 small zucchini, cut into quarter pieces
- 1 cup shredded mozzarella cheese
Instructions
- In a large skillet over medium heat, brown the ground beef with the onion, breaking up the meat as it cooks until no longer pink. Drain excess grease if necessary.
- Add the garlic, Worcestershire sauce, Italian seasoning, beef bouillon, crushed red pepper, and fire roasted tomatoes (do not drain tomatoes). Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Incorporate the zucchini and simmer for an additional 10 minutes until the zucchini start to soften.
- Sprinkle the shredded mozzarella on top, lower the heat, and cover the skillet with a lid for 3-5 minutes until the cheese is melted. Serve immediately.
Notes
Feel free to substitute ground turkey for lean ground beef for a healthier option.
Add more vegetables like bell pepper or mushrooms for extra flavor and nutrition.
Adjust the red pepper flakes according to your spice preference.
