  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1.5 cups seasoned italian breadcrumbs
  • 0.5 cup grated parmesan cheese
  • 1.5 cups vegetable oil for frying
  • 2 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 0.25 cup parmesan cheese for topping
  • 2 tablespoons fresh basil chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. Set up three shallow bowls: one with flour, the second with beaten eggs, and the third with seasoned breadcrumbs and 0.5 cup of Parmesan cheese.
  3. Dredge each chicken breast in flour, shaking off any excess, dip into beaten eggs, and then coat thoroughly with the breadcrumb-Parmesan mixture. Press gently to ensure adherence.
  4. In a large skillet, heat vegetable oil over medium-high heat. Fry the chicken until golden brown on both sides, approximately 3–4 minutes each side. Drain on paper towels afterward.
  5. Spread a thin layer of marinara on the baking sheet and place the fried chicken on top. Spoon 2-3 tablespoons of marinara over each piece, then add shredded mozzarella and a sprinkle of Parmesan on top.
  6. Bake for 20–25 minutes until the cheese is melted and bubbling, ensuring the chicken's internal temperature reaches 165°F (74°C).
  7. Remove from the oven, let rest for 5 minutes, and garnish with fresh basil before serving.

Notes

For extra crunch, consider using panko breadcrumbs in the coating.
