Ingredients

  • 3 cups cooked chicken
  • 1 pound spaghetti
  • 1 teaspoon kosher salt
  • 3 cups grated cheddar cheese
  • 4 ounces cream cheese
  • 2 (10.5 ounce) cans condensed cream of mushroom soup
  • 1 cup chicken broth
  • 1 (10 ounce) can diced tomatoes with green chiles
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder

Instructions

  1. Preheat the oven to 350°F and prepare a 9×13 inch casserole dish with cooking spray.
  2. Boil water in a large pot, add spaghetti and kosher salt. Cook for one minute less than the package directions. Drain and set aside.
  3. In the same pot, mix two cups of cheddar cheese, cream cheese, mushroom soup, chicken broth, diced tomatoes, onion powder, and garlic powder until well combined. Stir in cooked chicken and spaghetti.
  4. Transfer the mixture to the casserole dish, top with the remaining cup of cheddar cheese, and bake uncovered for 20 to 30 minutes until the cheese is melted and bubbly.

Notes

Feel free to substitute the cooked chicken with rotisserie chicken for a quicker option.
For a spicier kick, consider adding jalapeños or using spicy diced tomatoes.
