Description
This Chinese Chicken Salad brings together tender chicken, crunchy veggies, and a vibrant vinaigrette for a fresh and healthy meal. It’s perfect for a quick dinner or a light lunch!
Ingredients

- 1/2 cup rice vinegar
- 1/4 cup soy sauce
- 1/4 cup sesame oil
- 2 tbsp honey
- 1 tbsp fresh ginger, grated
- 1 clove garlic, minced
- 4 cups mixed salad greens
- 2 cups cooked chicken, shredded
- 1 cup shredded carrots
- 1 cup red cabbage, shredded
- 1/2 cup green onions, sliced
- 1/4 cup slivered almonds
- 1/4 cup cilantro, chopped
Instructions
- Combine all of the ingredients for the vinaigrette in a jar with a lid or bowl. Shake or whisk until well combined. Refrigerate until ready to serve.
- In a large bowl combine all of the salad ingredients.
- Pour the vinaigrette over the salad, a little at a time, tossing it together until it’s dressed to your liking. Serve immediately.
Notes
Feel free to add more vegetables for extra crunch.
You can prepare the vinaigrette a day ahead and store it in the fridge.
