Description

This Chinese Chicken Salad brings together tender chicken, crunchy veggies, and a vibrant vinaigrette for a fresh and healthy meal. It’s perfect for a quick dinner or a light lunch!


Ingredients

Scale
  • 1/2 cup rice vinegar
  • 1/4 cup soy sauce
  • 1/4 cup sesame oil
  • 2 tbsp honey
  • 1 tbsp fresh ginger, grated
  • 1 clove garlic, minced
  • 4 cups mixed salad greens
  • 2 cups cooked chicken, shredded
  • 1 cup shredded carrots
  • 1 cup red cabbage, shredded
  • 1/2 cup green onions, sliced
  • 1/4 cup slivered almonds
  • 1/4 cup cilantro, chopped

Instructions

  1. Combine all of the ingredients for the vinaigrette in a jar with a lid or bowl. Shake or whisk until well combined. Refrigerate until ready to serve.
  2. In a large bowl combine all of the salad ingredients.
  3. Pour the vinaigrette over the salad, a little at a time, tossing it together until it’s dressed to your liking. Serve immediately.

Notes

Feel free to add more vegetables for extra crunch.
You can prepare the vinaigrette a day ahead and store it in the fridge.
