Description

These Chocolate Chip Zucchini Bars are a wonderful mix of sweetness and moisture, featuring shredded zucchini and rich chocolate chips. Perfect for a snack or dessert, they are easy to prepare and family-friendly, making them an ideal homemade treat for any occasion.


Ingredients

  • 2 cups zucchini, shredded
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tbsp vanilla
  • 1 tsp cinnamon
  • 1 3/4 cups flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1 (11 oz) bag chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13 inch pan with non-stick spray.
  2. Grate the zucchini to obtain 2 cups (approximately 2 zucchinis).
  3. In a large bowl, cream the softened butter, brown sugar, eggs, and vanilla together until smooth.
  4. Mix in the cinnamon, flour, salt, and baking powder until fully combined.
  5. Gently fold in the shredded zucchini and chocolate chips into the batter.
  6. Pour the mixture evenly into the prepared pan.
  7. Bake for 30 to 35 minutes until a toothpick comes out clean.
  8. After removing from the oven, press more chocolate chips on top for added flavor.

Notes

For a richer flavor, use dark chocolate chips instead of semi-sweet.
Ensure the zucchini is well-drained to prevent a soggy texture.
These bars can be stored in an airtight container for up to one week.
