- 2 cups zucchini, shredded
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 2 eggs
- 1 tbsp vanilla
- 1 tsp cinnamon
- 1 3/4 cups flour

- 1 (11 oz) bag chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×13 inch pan with non-stick spray.
- Grate the zucchini to obtain 2 cups (approximately 2 zucchinis).
- In a large bowl, cream the softened butter, brown sugar, eggs, and vanilla together until smooth.
- Mix in the cinnamon, flour, salt, and baking powder until fully combined.
- Gently fold in the shredded zucchini and chocolate chips into the batter.
- Pour the mixture evenly into the prepared pan.
- Bake for 30 to 35 minutes until a toothpick comes out clean.
- After removing from the oven, press more chocolate chips on top for added flavor.
Notes
For a richer flavor, use dark chocolate chips instead of semi-sweet.
Ensure the zucchini is well-drained to prevent a soggy texture.
