  • 40 g Cinnamon Toast Crunch cereal (1 cup)
  • 85 g unsalted butter (6 Tablespoon), softened, room temp
  • 50 g granulated sugar
  • 50 g brown sugar, packed
  • 1 Tablespoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • pinch kosher salt
  • 40 g Cinnamon Toast Crunch cereal (1 cup), or more if desired
  • 113 g block style cream cheese (½ cup), softened, room temp
  • 57 g unsalted butter (¼ cup), softened, room temp
  • 170 g confectioners' sugar (1 ½ cup)
  • pinch kosher salt
  • 1 teaspoon pure vanilla extract
  • Cinnamon Toast Crunch cereal, as needed to garnish

Instructions

  1. Activate Yeast: In a stand mixer, sprinkle yeast over warm water. Dissolve with sugar and let sit for 5 minutes. Add warm milk, egg, and egg yolk, then attach dough hook.
  2. Mix Dough: Whisk together flour and salt in a bowl. Add half to the mixer and mix on low until dough forms. Gradually add softened butter, then add remaining flour and cereal.
  3. First Rise: Knead dough on medium speed for 2 minutes until smooth. Transfer to a greased bowl, cover, and let rise for 1 hour until doubled in size.
  4. Prepare Filling: Mix together butter, sugars, cinnamon, vanilla, and salt until combined. Set aside.
  5. Fill and Slice: Punch down the risen dough. Roll to a 20×14-inch rectangle and spread filling. Cut into 12 strips.
  6. Roll Spirals: Sprinkle with cereal and roll tightly from the long edge. Place in a greased baking pan.
  7. Second Rise: Cover and let rise in a warm area for 30-40 minutes. Preheat oven to 350℉.
  8. Bake: Bake for 28-30 minutes until golden brown. Rest for 10 minutes before adding frosting.
  9. Cream Cheese Frosting: Beat cream cheese and butter until smooth. Add vanilla, salt, and powdered sugar, then mix until well combined. Spread over rolls and top with cereal.
