This Cottage Cheese Tiramisu Crepe Roll is a delightful treat that combines rich flavors and simple preparation. Made with cottage cheese, a hint of maple syrup, and a dusting of cocoa, it’s perfect for dessert lovers looking for an easy, homemade option.


Ingredients

  • ½ cup all-purpose flour
  • ½ teaspoon kosher salt
  • 1 cup 4% cottage cheese
  • ½ cup water
  • 3 large eggs
  • 2 tablespoons unsalted butter
  • 1 tablespoon maple syrup
  • ½ cup heavy cream
  • ¾ cup 4% cottage cheese
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 2 tablespoons cocoa powder

Instructions

  1. Preheat the oven to 350℉ and line a 12"x18" baking sheet with parchment paper, then spray with nonstick cooking spray.
  2. Blend the crepe ingredients in a high-speed blender until smooth.
  3. Pour the crepe mixture into the prepared baking sheet.
  4. Bake in the oven for 10 minutes, then cool for a few minutes before refrigerating for an hour.
  5. To prepare the filling, blend cottage cheese, syrup, vanilla extract, and espresso powder until smooth. Set aside.
  6. In a large bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the blended cottage cheese into the whipped cream.
  8. Place the cooled crepe on a cutting board, spread the filling while leaving 3 inches at one end.
  9. Roll the crepe away from you towards the empty end.
  10. Sift cocoa powder on top, slice, and serve.

Notes

For a lighter filling, use low-fat cottage cheese instead of 4%.
Ensure the crepes have cooled completely before spreading the filling to prevent melting.
Serve chilled for a refreshing dessert experience.
