Description

This Cowboy Chicken features juicy chicken cutlets topped with black beans, corn, and zesty BBQ sauce. It’s a flavorful, simple dish perfect for busy nights with the family.


Ingredients

  • 4 chicken cutlets or 2 chicken breasts cut horizontally
  • 1½ teaspoons smoked paprika
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil divided
  • 1 small yellow onion diced
  • 1 (15 ounce) can black beans drained and rinsed
  • 1 (15.25 ounce) can corn kernels drained
  • 1 (10.5 ounce) can diced tomatoes with chilies drained
  • 2 tablespoons fresh lime juice juice from 1 lime
  • ¼ cup barbecue sauce any variety
  • ¾ cup shredded mexican cheese blend
  • chopped fresh cilantro
  • jalapeños
  • avocado for serving

Instructions

  1. Preheat the oven to broil (500°F) and set the rack 6 inches below the broiler.
  2. In a small bowl, mix smoked paprika, garlic powder, onion powder, salt, and pepper. Reserve 1½ teaspoons for the cowboy caviar.
  3. Season both sides of the chicken using the seasoning mix.
  4. In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Cook the chicken for 3-4 minutes per side until fully cooked, then transfer to a plate.
  5. Reduce the heat to medium, add the remaining tablespoon of olive oil to the skillet. Sauté the onion until tender, about 4-5 minutes.
  6. Add the black beans, corn, diced tomatoes, reserved seasoning mix, and lime juice to the skillet. Stir well and heat through for 4-5 minutes.
  7. Return the chicken to the skillet. Brush barbecue sauce on top and add the shredded cheese.
  8. Broil for 2-3 minutes, until the cheese is melted and bubbly.
  9. Serve with sliced jalapeños, chopped cilantro, and avocado if desired.

Notes

Feel free to use any type of barbecue sauce you prefer.
Serve with tortilla chips or over rice for a complete meal.
Storage: Leftover Chicken can be kept in the fridge for up to 3 days.
