- 2 tbsp extra virgin olive oil
- 1 large onion, diced
- 1 medium apple, diced
- 2 garlic cloves, minced
- 1 tsp fresh rosemary, chopped
- 4 cups cranberry walnut bread, cubed
- 1 large egg, beaten
- 1/2 cup heavy cream
- 1 cup chicken stock
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 spray olive oil spray or cooking spray
Instructions
- Preheat your oven to 375°F.
- In a pan, heat olive oil and sauté chopped onions until translucent.
- Add diced apple and cook until softened, then stir in minced garlic and rosemary.
- In a large bowl, combine cubed cranberry walnut bread and onion mixture.
- Whisk together egg, heavy cream, chicken stock, salt, and pepper; pour over the bread and mix.
- Transfer to a greased baking dish and spray the top with olive oil.
- Bake for 30 minutes until edges are browned.
Notes
You can prepare the stuffing a day in advance and store it in the refrigerator until ready to bake.
To make it gluten-free, use gluten-free cranberry walnut bread or any firm gluten-free bread.
Add extra chicken stock if the mixture seems too dry before baking.
