Description

This Creamy Bacon Potato Soup packs irresistible flavor and simple prep with key ingredients like bacon, potatoes, and ranch seasoning—a wonderful comfort food for quick dinners!


Ingredients

  • 6 strips thick-cut bacon, chopped
  • 1 medium onion, diced
  • 1 teaspoon minced garlic
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 3 lbs russet potatoes, peeled and diced into 1-inch cubes
  • 2 cups whole milk
  • 3 tablespoons Ranch seasoning, or a 1 oz package (dry mix only)
  • 1 cup sour cream
  • salt and pepper, to taste
  • shredded cheddar cheese
  • sliced green onions or chives

Instructions

  1. In a large dutch oven or stock pot, cook the chopped bacon over medium-high heat until crispy. Remove bacon, leaving grease in the pot and let it cool on a paper towel.
  2. Add the diced onion to the pot and cook until it's translucent, about 5 minutes. Stir in the minced garlic for an additional 30 seconds.
  3. Incorporate the flour, cooking for 2 minutes until it's light and golden, stirring constantly to avoid burning.
  4. Gradually pour in the chicken broth while stirring to deglaze the pot. Bring the mixture to a simmer, then add the diced potatoes. Let the mixture simmer for 15 to 20 minutes until potatoes are fork-tender.
  5. Use a potato masher to mash half of the potatoes for a thicker consistency, while leaving some chunks intact. Add the milk and Ranch seasoning, continuing to simmer for another 10 minutes.
  6. Remove the pot from heat, stir in the sour cream until well combined. Season with salt and pepper to taste, and serve warm topped with crispy bacon, shredded cheddar cheese, and chopped green onions with an extra dollop of sour cream if desired.

Notes

For a smoky flavor, you can use smoked bacon.
Adjust seasonings according to your taste preference. Feel free to add more Ranch seasoning for an extra kick.
This soup can be made ahead; reheat gently on the stove before serving.
