- 2 teaspoons italian seasoning
- 2 tablespoons olive oil
- 1 pint cherry tomatoes halved
- 8 ounce block cream cheese very soft
- 4 garlic cloves minced
- ½ teaspoon salt plus more to season the chicken
- ¼ teaspoon pepper plus more to season chicken
- 2 tablespoons fresh basil chopped
- ¾ cup shredded mozzarella cheese
Instructions
- Preheat the oven to 425°F.
- Arrange the chicken breasts in a large baking dish, seasoning generously with salt, pepper, and Italian seasoning.
- In a medium bowl, combine the cream cheese, olive oil, garlic, salt, pepper, and fresh basil. Gently fold in the halved cherry tomatoes.
- Spoon the cream mixture over the chicken, ensuring they are thoroughly covered.
- Bake for 30-40 minutes until the chicken is fully cooked and no longer pink.
- Sprinkle the mozzarella on top and broil for 4-5 minutes until golden and bubbly.
- Garnish with additional basil before serving.
Notes
Ensure the cream cheese is very soft for easy mixing.
For best results, use fresh basil for garnishing.
