Instructions
- Season the chicken with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat.
- Cook the chicken for 2 minutes on each side until golden brown and fully cooked, then transfer it to a plate and let it rest for 5 minutes before slicing.
- In the same skillet, combine milk, chicken broth, and minced garlic, then bring to a simmer.
- Add the fettuccine and stir gently every 30 seconds until softened, around 3 minutes to prevent sticking. Continue to stir occasionally as it cooks for about 9-10 minutes, ensuring some liquid remains in the skillet.
- Once the pasta is almost cooked, incorporate the heavy cream and parmesan cheese, stirring to mix well.
- Simmer for an additional 2 minutes, allowing the sauce to thicken while occasionally stirring. If it becomes too thick, add a splash of hot water to restore creaminess.
- Taste and adjust seasoning with salt and pepper, then serve immediately, garnished with additional parmesan and parsley.
