- 6 ears corn, husk and silk removed
- 4 tablespoons softened butter
- salt and pepper, to taste
- 1 cup cilantro lime crema
- cilantro, to taste
- Tajin, to taste
- crumbled cotija cheese, or queso fresco, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Arrange the corn on a large baking sheet. Brush each ear with softened butter and season with salt and pepper.
- Roast the corn for 20 minutes at 400°F. If desired, turn on the broiler for the last 2 minutes to achieve a charred effect, watching closely to prevent burning.
- Take the corn out of the oven, generously spread cilantro lime crema over it, and add your favorite toppings before serving.
Notes
For added flavor, try using flavored butter or adding additional spices to the corn before roasting.
Cilantro lime crema can be prepared a day in advance for convenience.
Adjust the amount of Tajin and cheese based on personal preference.
