Creamy Cucumber Pasta Salad is a delightful mix of rotini pasta, fresh cucumber, and a tangy dressing. Ingredients

  • 1/2 pound rotini pasta
  • 1 cucumber, thinly sliced
  • 1/2 sweet white onion, thinly sliced
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 tbsp dill
  • 2 tbsp white vinegar

Instructions

  1. Cook the rotini pasta until al dente according to package instructions, then rinse it under cold water to cool.
  2. Cut the cucumber in half lengthwise, remove the seeds with a spoon, and slice thinly.
  3. Thinly slice the sweet onion and soak it in a bowl of cold water to reduce the sharpness.
  4. In a small bowl, whisk together sour cream, mayonnaise, sugar, salt, dill, and white vinegar until smooth.
  5. In a large bowl, combine all ingredients and mix thoroughly. Refrigerate for 45 minutes before serving.

Notes

You can use any pasta shape you like.
