  • 2 pounds yukon gold potatoes, cut into ½-inch pieces
  • ¾ cup mayonnaise
  • 2 tablespoons dill pickle brine
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon yellow mustard
  • 2 garlic cloves, grated
  • 1 teaspoon sea salt
  • freshly ground black pepper
  • 2 celery stalks, diced
  • ½ cup diced dill pickles
  • ½ cup chopped fresh chives
  • 2 tablespoons chopped fresh dill
  • 2 hard-boiled eggs, peeled and chopped, optional

Instructions

  1. Fill a large pot with cold water and add the potatoes, ensuring they are covered by about 1 inch of water.
  2. Bring the water to a boil over high heat, then reduce to a simmer and cook for 10 minutes or until the potatoes are tender.
  3. Drain the potatoes and allow them to cool to room temperature.
  4. In a medium bowl, whisk together the mayonnaise, dill pickle brine, apple cider vinegar, yellow mustard, grated garlic, sea salt, and a few twists of freshly ground black pepper.
  5. Transfer the cooled potatoes to a large mixing bowl and pour in the dressing, stirring well to coat, and slightly mashing the potatoes to achieve a creamy texture.
  6. Add the diced celery, chopped dill pickles, chives, fresh dill, and optional hard-boiled eggs, gently folding them into the mixture.
  7. Cover the bowl and refrigerate for at least one hour, or up to 24 hours, to let the flavors meld.
  8. Season to taste with additional salt or pepper before serving.
  9. Store any leftovers in an airtight container in the refrigerator for up to three days.
