Ingredients

  • 2 tbsp olive oil
  • 8 oz crimini mushrooms, sliced
  • 1 lb potato gnocchi
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 4 cups fresh spinach
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes

Instructions

  • Heat olive oil in a skillet over medium-high heat and sauté seasoned mushrooms for about 2 minutes.
  • Add remaining mushrooms, gnocchi, chicken broth, heavy cream, garlic, Italian seasoning, smoked paprika, and salt; bring to a boil.
  • Cover and simmer for about 5 minutes, stirring occasionally.
  • Add fresh spinach and cook until wilted, about 5 minutes more.
  • Season with salt, pepper, and red pepper flakes; fold in reserved mushrooms before serving.

Notes

Avoid overcrowding the skillet when cooking mushrooms to achieve a nice brown color.
For a lighter sauce, consider using half-and-half instead of heavy cream.
