- 8 oz crimini mushrooms, sliced
- 1 lb potato gnocchi
- 1 cup chicken broth
- 1 cup heavy cream

- 4 cups fresh spinach
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
Instructions
- Heat olive oil in a skillet over medium-high heat and sauté seasoned mushrooms for about 2 minutes.
- Add remaining mushrooms, gnocchi, chicken broth, heavy cream, garlic, Italian seasoning, smoked paprika, and salt; bring to a boil.
- Cover and simmer for about 5 minutes, stirring occasionally.
- Add fresh spinach and cook until wilted, about 5 minutes more.
- Season with salt, pepper, and red pepper flakes; fold in reserved mushrooms before serving.
Notes
Avoid overcrowding the skillet when cooking mushrooms to achieve a nice brown color.
For a lighter sauce, consider using half-and-half instead of heavy cream.
