- 4 garlic cloves, minced
- 4 tbsps organic all-purpose flour
- 1 ½ tbsps tuscan marry me blend
- 1 teaspoon smoked paprika
- 1 teaspoon sea salt
- 3–4 tbsps organic tomato paste
- 5–6 sundried tomatoes, optional
- 4 cups chicken or vegetable stock
- 1 ½ cups organic heavy cream
- ½ lemon, freshly-squeezed
- 1 cup chopped kale, organic
- 2 cups cherry or grape tomatoes, halved or whole
- 2 (8 oz.) packages organic cheese + spinach tortellini
- 2 bay leaves, optional
- 1 cup freshly-grated parmesan
Instructions
- Heat olive oil in a medium-sized dutch oven over medium-high heat. Add minced garlic and sauté with sundried and fresh tomatoes for 1-2 minutes until fragrant.
- Stir in the Tuscan marry me blend, smoked paprika, and sea salt. Combine with tomato paste and flour, stirring until smooth.
- Gradually pour in chicken or vegetable stock while stirring frequently, ensuring there are no lumps. Add lemon juice, heavy cream, tortellini, bay leaves (if using), and kale, stirring to combine.
- Allow the soup to simmer for 8-10 minutes until thickened and the tortellini are tender, noting that they will float to the top when cooked.
- Mix in freshly-grated parmesan until melted, then remove from heat. Serve immediately, topped with more parmesan if desired.
