Description

Ingredients

  • 2 medium zucchini, sliced
  • 2 cups panko breadcrumbs
  • 1/2 tsp salt
  • 1 cup flour
  • 3 eggs, beaten
  • oil for frying

Instructions

  1. Heat oil in a large skillet.
  2. Slice zucchini into 1/4" rounds and set aside.
  3. Whisk together breadcrumbs and salt.
  4. Put flour into a shallow plate and beat eggs in a shallow bowl.
  5. Dredge each zucchini round in flour, dip in beaten eggs, and then coat with the breadcrumb mixture.
  6. Fry zucchini rounds until golden brown on both sides, repeating until all slices are fried.

Notes

For an extra kick, add some spices to the breadcrumb mixture such as garlic powder or paprika.
Make sure not to overcrowd the skillet while frying to achieve an even golden color.
Serve immediately for the best flavor and texture.
