Description

This Crockpot Potato Soup is a delightful blend of creamy potatoes, garlic, and onions, offering a quick and satisfying meal that warms the soul. Perfect for cozy dinners and gatherings!

Ingredients

Scale
  • 5 large russet potatoes
  • 1 medium onion
  • 3 garlic cloves
  • 4 cups chicken broth
  • 2 10.5 oz cans cream of chicken soup
  • ½ teaspoon dried thyme
  • Salt and pepper to taste
  • Sliced green onions
  • Shredded cheese
  • Sour cream
  • Chopped bacon

Instructions

  • Peel and cube the russet potatoes; chop the onion and mince the garlic.
  • Combine the potatoes, onion, garlic, chicken broth, and cream of chicken soup in the slow cooker. Season with thyme, salt, and pepper; stir gently.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are soft.
  • Blend the soup to desired creaminess using a potato masher or immersion blender.
  • Serve hot, topping with cheese, sour cream, bacon, and green onions.

Notes

For a vegetarian version, substitute chicken broth with vegetable broth.
To avoid mushy potatoes, avoid overcooking them in the slow cooker.
Using pre-chopped onion and garlic can speed up the prep time.
